Tip
Add kimchi at the end without cooking it to keep the live cultures.
Kimchi and fermented food
Kimchi is fermented cabbage with naturally occurring live bacteria. Add it off the heat so the heat doesn't kill them.
Frequently asked questions
Where do I find kimchi?
In the Korean section of supermarkets or online — or make it at home with cabbage and Korean chilli.
Is kimchi spicy?
Usually a little. Start with two spoons and add more to taste.
Is it salty?
Fairly, so go easy on soy and salt elsewhere in the bowl.
