Kabsa is an everyday dish in Saudi homes, but white rice raises blood sugar quickly. The fix: cauliflower "rice" that soaks up all the kabsa spices, with roughly 85% fewer carbs.
Not ready to switch fully? Mix half cauliflower, half brown rice.
What changes for blood sugar
- Far fewer carbs than white rice
- More fibre and vegetables
- The kabsa flavour you love
Cauliflower Rice Kabsa
Ingredients
- 1 large cauliflower, grated
- 3 skinless chicken pieces
- 1 onion, 1 tomato
- 1 tbsp tomato paste
- 1 tbsp olive oil
- Kabsa spice and dried lime
- Handful of almonds to garnish
Method
- Cook chicken with onion, tomato, spices and 2 cups water for 25 minutes.
- Remove the chicken and brown it in the oven.
- Add the grated cauliflower to the remaining broth and stir 8 minutes until it absorbs the flavour without going soft.
- Serve with the chicken, almonds and a salad.
Tip
Squeeze the grated cauliflower in a towel first so it doesn't turn mushy.
How many carbs do you save?
A cup of cooked white rice has about 45 g carbs; a cup of grated cauliflower has about 5 g. A big difference for diabetics and keto eaters, with more fibre and vitamin C.
Mistakes that ruin cauliflower rice
- Grating it so fine it turns to mush
- Not squeezing out the water first
- Cooking it longer than 10 minutes
- Adding extra water instead of just the broth
If you don't love it the first time
Start with half cauliflower, half brown rice and increase the cauliflower over two weeks. You get used to it quickly, especially with bold kabsa spices.

Yes, it's sold frozen in most supermarkets. Cook it straight from frozen.
Is it keto-friendly?
Yes, it's low-carb. Skip the almonds if you count carbs very strictly.
Is it suitable for diabetics?
It's far lower in carbs than rice, but everyone is different — check with your doctor or dietitian.
